This special interest cookbook expounds on pork in its infinite variety. An introductory section covers pork's nutritional value, methods of cooking, carving skills, and pork in the microwave. Succeeding chapters cover appetizers, soups, salads, main dishes including wok cookery, pork over the coals, and economical feature presentations. The recipes give" quantities in metric and Imperial measures. The full-colour illustrations are attractive. The index lists many recipes by title and by topic such as ribs (ten different recipes). This reviewer enjoyed herbed spareribs, which were tasty. This book is for cooks with some experience and would be useful in secondary school libraries or family studies rooms.
