THE COPPER BAY COOKBOOK: RECIPES FROM THE QUEEN CHARLOTTE ISLANDS
Ernst, Maria
Reviewed by Marilyn Kogon
Volume 20 Number 5
The 120 recipes in this cookbook range from appetizers, soups, salads, vegetables, and main dishes to breads and desserts. Some reflect the author's European background, and she has adapted traditional recipes using the produce and game of the Canadian west coast. Ernst prepares these dishes for her guests at the Copper Bay Lodge on Moresby Island in the Queen Charlottes. Two short sections begin the book. One provides ten kitchen hints in a sentence or two for each. The second section provides a conversion chart from Imperial to metric measure and various weights and measures as well as equivalent Imperial and metric measures for eight foods. All recipes are given in Imperial measure only. Some ingredients are available only from health food stores. Schools should be aware that some recipes use liquor as an ingredient. Good index. No illustrations or pictures. For libraries that can afford the purchase of a specialized cookbook from a hunting and fishing lodge.
